Introduction

In the beginning of the spring season, before any spraying of the vineyards, the leaves are picked and processed with a small amount of vinegar and salt by the rural women on the shores of Lake Urmia who work together in the form of eco-friendly livelihood groups. It is without any chemical additives and it is very good and sour and tasty and medium size for preparing hair leaves.
