Introduction

It is a herbaceous and annual plant with a height of about 50 cm and many branches, its leaves are alternate, composed of three leaflets and about half of each leaflet is toothed. Its flowers are bisexual and white and yellow, the fruit of the plant is in the shape of a pod or curved and there are some seeds inside. The seeds (fenugreek seeds) are very hard, grooved, brown in color and their taste is bitter. According to traditional medicine experts, its nature is hot and dry. Fenugreek contains mucilages, saponins, flavonoids, sterols and fats, and its seeds contain an alkaloid called teri. Gonlin, choline, essential oil, saponin, prolamin, starchy substances, glaze, fat, nitrogenous substances, bitter extract and a yellow coloring substance have been detected.
